Best Appetizer Ever - Spinach Balls

First, let me wish all of you a Happy 2012!  My official resolution is to be more frugal this year..this is going to be quite a task for me, but I am hoping to get some guidance from fellow bloggers.  :-)


I do not know where this recipe originated...I do know that my mom, her sisters and my cousins and I all have the coveted recipe.  It is, by far, a favorite of our family.  I cannot remember a Christmas Eve family gathering without these delicious spinach balls.  I hope you love them as much as we do!

You will need:

2 10 oz packages of frozen spinach
2 c. flavored stuffing mix
1 large onion finely chopped
6 eggs well beaten
3/4 c. melted margarine
1/2 c. grated or shredded parmesan
3/4 tsp. cayenne pepper (to taste)
1 1/2 tsp. garlic salt

You will need about 3-4 hours for the mixture to chill in the fridge.

Thaw the spinach and squeeze out the excess moisture (very important).  If you are like me and forget to thaw til the last minute, I have been known to just run the spinach under hot water to help the thawing along.  :-)  


Combine the spinach, dried stuffing, chopped onion, eggs, margarine, cheese, cayenne pepper and garlic salt.  Mix well (I usually get in there with my hands to mix it together).
Chill the mixture in the fridge for about 3-4 hours before shaping.

Lightly grease your cookie sheet. Shape the mixture into balls.  This recipe yields 6-8 dozen small spinach balls...I tend to make mine larger and it usually makes about 4 dozen.  You can play around with the size, depending on the size of your guest list.  Here they are before going in the oven...325 degrees for 15-20 min.

  8. I finally got around to making these after having had them on a pinterest board for months, and they're delish! I had to modify the recipe a bit due to an ingredient issue, so used flavored bread crumbs instead of stuffing mix, and cheddar instead of parmesan, but still good. (I do kind of wish I'd noticed I could have halved the recipe easily, but... more deliciousness, right?)
