Key Lime Cake

I was forwarded this recipe from my Aunt and don't know where it originated, but it is WAY too good not to share.  Key Lime cake...it is a moist cake that tastes just like the pie, but if you're like me and prefer cakes over pies, this is perfection!


1 box lemon cake mix
1 1/3 c. vegetable oil
4 eggs
One 3oz. package of lime flavored gelatin mix
3/4 c. orange juice

Mix all together and pour into a 13x9 pan.

Bake according to instructions on cake box.

Frosting
1/2 c. butter (1 stick)
One 8oz. package cream cheese
3 tbsp. fresh lime juice
4 c. confectioners sugar

In a large bowl, beat the butter and cream cheese til fluffy...add the lime juice and beat together, then add the confectioners sugar and beat.

(This is A LOT of frosting...if you are a frosting lover, this will be great, but I use about 2/3 of it and that's good for me)

So so good...

I just whipped one together and threw it in the oven. I cant wait to try it. I have some left over keylime custard that I used to fill cupcakes not to long ago that I am going to attempt to blend with cream cheese for my topping. Thanks for the great key lime recipe.

I love lime flavored foods and I was so excited to try this recipe! It's so quick & easy to make and SO worth it.
I made this as cupcakes and substituted orange juice in the frosting for the lime juice. They were absolutely fantastic, I brought them to work and everyone raved about them! Thanks for the great recipe, definitely keeping this one!
